I cannot even believe the summer is starting to come to a close! Seriously, how on earth did it get to be August already?? This summer, and year for all that matters, seems to be speeding by in hyper-drive! And remember when the month of September used to be the “official” back to school month? Well, now it’s August! So I guess you just have to go with the flow, right?
I mention back to school because, honestly, this is a great recipe to make for the perfect after school snack or even to wrap up and stick in a school lunch! Since it can still be VERY warm in August, an easy no bake treat can be a lifesaver to any busy mom or anyone looking for a quick sweet tooth fix.
I like to make my krispie treats thick, so I used an 8″x 8″ glass dish to form them, but you could go with thinner treats and use a 9″x 13″ pan if you like. I also used classic flavored chocolate sandwich cookies in this recipe, but think of the fun you can have with all the cool new flavors of sandwich cookies that seem to be cropping up every season! It’s totally up to you!
Cookies and Cream Krispie Treats are a nice variation on plain old krispie treats. My teenage sons gave these krispie treats two thumbs up! Krispie treats are always a favorite treat in my house. Recipe for Cookies and Cream Krsipie Treats:
prep time: 10 min
cook time: (cool time) 20 min
yield: 16 servings
A fun twist on the classic krispie treat!
Ingredients:
1/4 cup butter
1-10.5 oz. bag mini marshmallows
1 tsp. pure vanilla extract
5 cups toasted rice cereal
1 1/2 cups coarsely chopped chocolate sandwich cookies (about 16 cookies), divided
2 oz. white chocolate, melted
Directions:
1. Spray an 8″x 8″ glass baking dish with cooking spray. (Or a 9″x 13″ for thinner treats) Set aside.
2. In large pan on medium heat, melt the butter and the mini marshmallows, stirring frequently until the marshmallows are just melted.
3. Take the pan off the heat, and stir in the vanilla extract. Add in the cereal and all but 3 TBS. of the chopped cookies.
4. Stir to combine, fully coating cereal and cookies in the marshmallow mixture. Spray hands with cooking spray and press the mixture down into the prepared baking dish.
5. Drizzle with the melted white chocolate and then sprinkle with the reserved chopped cookies.
6. Put in the refrigerator for about 20 minutes to allow the treats to set up and the chocolate to harden.
7. Cut into 16 squares (for the 8″x 8″ pan). Store covered at room temperature.
