Looking for a paleo breakfast casserole that is easy to make? This sweet potato breakfast casserole is absolutely delicious and SO easy to throw together!
Paleo Breakfast Casserole
This delicious and somewhat nutritious paleo breakfast casserole is great for upcoming holidays. It’s filled with chunks of sweet potato, sausage, and more. This is low FODMAP diet friendly, as well as gluten free!
I love breakfast casseroles! They are usually so easy to put together, and everyone seems to enjoy them. A few weeks ago during General Conference, I decided I would make a breakfast casserole to start the morning off. While I usually default to my favorite easy sausage breakfast casserole, since we’ve had to put Jack on a low FODMAP diet, I thought I would make something he could enjoy, too. I’m supposed to be eating little dairy and gluten as well, so I figured I could indulge in it guilt-free, as well!
As it turned out, this turned into a Paleo breakfast casserole. While I don’t have any desires to live a complete Paleo lifestyle, I think it’s nice to incorporate those types of meals every now and again. This casserole was SO yummy, even if it was missing some of my favorite breakfast casserole ingredients (namely, cheese.)
I never used to eat sweet potatoes until I met Forrest, but they’ve become one of my favorite foods to cook with. They are a lot more nutritious than regular potatoes, and really, I think they are a lot more flavorful. I had used sweet potatoes in these healthy breakfast burritos in the past, so I thought it would be fun to use them in this casserole!

I used frozen sweet potatoe fries instead of fresh sweet potatoes. Sure made things go much faster.
Also tasted very good. Try when you don’t have a lot of time.

Has anyone made this ahead of time and freeze it?!
Katie says
Yes! Many have had success with this 🙂
Stacey says
Can I make this ahead of time and reheat? I’d like to find something for the kids to grab, heat, and go for school and this looks delicious. Just curious how it would be warmed up. Thanks! Stacey
Katie says
You sure can! Lots of people have had great success with it. I personally haven’t reheated, but a lot of people say they cut it into slices and then just pipe it into the microwave!
Wilma says
Has anyone tried using canadian bacon instead of the sausage?
John says
Maybe I missed it but do you know how many this would serve. I just started the Paleo diet and am concerned about quantity. This sounds so much like the one I made before I went on the diet. It sounds so good and from the responses, it must be.
Thanks
John
Katie says
Oops I don’t have that! I would say it would generously serve 5, though it could easily serve more 🙂
Camille says
I make this and cut it into squares and freeze them. Great for a quick breakfast when I don’t have time to cook.
John Shaw says
Katie: Thank you so much. Again, it looks delicious and am going to try it. I bet the sweet potatoes just add that much more to the flavor.
Katie says
It’s one of our very favorites!
Brooke S says
How do you heat it up and for how long?
Ashley says
Are these sweet potatoes or yams? They look orange like yams. I used white sweet potatoes and am hoping they turn out The same. Excited to try it.
Katie says
They should taste fine! They said sweet potatoes at the store, but who knows! Maybe they are yams. Either way it should be fine 🙂
Heather says
I brought this to a carry in at work and everyone LOVED it! It is very good and I will be making this on a regular basis.
Katie says
Oh, that makes me SO happy to hear!

This looks delicious. Can I refrigerate what is not eaten and heat it up the next day?
Katie says
Absolutely!
Leslie Ramey says
Any change you might know if this could be made in a crock pot? I’m going to a brunch and someone requested a gluten free meal. No one else signed up for anything gluten free so I thought I’d give it a try.
Leslie Ramey says
That’s supposed to say “any chance” not any change. Lol
Katie says
Hi! I think you could definitely make this in a crock pot. I haven’t tried it, but I think it should work. Here is another breakfast casserole I’ve developed that is made in the slow cooker 🙂 https://www.clarkscondensed.com/food/slow-cooker-breakfast-casserole/
Lindsay says
Do you have to sauté sweet potatoes ahead of time? Wouldn’t they cook just fine without doing that?
Katie says
I haven’t tried doing that, but I would imagine you could try!
Kristin says
Can you make this with egg whites?
Katie says
I haven’t tried it, but I think it would turn out fine!
CRYSTAL HALL says

I just made this for breakfast. I loved it along with my daughter. Husband wasnt to keen on it notice the almond milk unsweetened. Thank you for sharing the recipe.?
Katie says
I’m glad you liked it! 🙂 Thanks for commenting, Melissa!
Brittani says
What is the serving size? How many grams of protein and so and so forth? Did I miss it?
Katie says
I’m sorry, I don’t usually include grams of protein, calories, etc. MyFitnessPal.com has a place where you can grab that information though! I would say this probably serves 8-12.
Nikki says
This is delicious, thank you!
I added some chopped spinach and some green onions – I also used chicken sausage. I’ve made it twice now (last time with ground turkey) and it comes out perfect.
I eat it as breakfast all week so I cut 9 servings and wrap them up individually for freezing. Throw one in the fridge the night before to thaw and just microwave it for breakfast! They freeze just fine.
Katie says
I’m so glad you enjoyed it. I’m definitely going to try and add spinach next time. Chicken sausage would be delicious! I’m glad to hear they freeze fine – I might have to try that.
Anna says
Is there any way to turn this into a crock pot recipe? Those are so convenient to turn on before you go to bed, waking up to a perfectly cooked breakfast 🙂
Katie says
You know, I haven’t tried, but that is now on my list of things to do. I would imagine you could though – just put everything in the night before and put it on low!
Joy says
Hello, very interested in trying this recipe. Trying to log nutritional information so calories can be tracked? Can you provide me with this information? Thanks, Joy
Katie says
Hi Joy – I just entered it on MyFitnessPal – here’s the results. I put it as having 10 servings.

I’m not totally sure. I’m glad you loved it though!
HOLLI says
Can you make/prep this the night before???
Katie says
You sure can – just refrigerate it, and pop it in the oven the morning of!
kendra says
Have made this before and it was a hit! Would I be able to make this ahead of time and keep it in fridge/freezer until I wanted to bake it?
Katie says
So happy to hear that! I definitely think you could make it before and put it in the fridge. Not positive how it would do in the freezer, but I imagine there wouldn’t be a problem!!
Sara says
You had me a low Fodmap. Can’t wait to make this today =)
Katie says
I hope you enjoyed it!
