The past week or so have been very warm – 70s on some days, sun shining…Spring has definitely sprung! We’ve really enjoyed going to the park and going on long walks around the lake. Even though that ended this morning when we woke up to a big snow storm, we have loved it!
A few days ago, it was feeling really like spring (even a little bit like summer.) To me, barbecue foods are best when the weather is nice and warm. We had invited my brother and sister-in-law, and their two boys, over for Sunday dinner, and Forrest and I thought it would be fun to have a spring-meal!
We’ve been trying to eat a little better, so instead of beef burgers, we made some delicious black bean burgers on wheat buns, topped with avocado, tomato, hummus, and BBQ sauce. We also served sweet potato fries (our favorite) and a few other better-for-you options. Everyone seemed to enjoy it, and it was nice, because we didn’t feel too full for dessert!
Since we made dinner a little lighter, we thought it would be okay to splurge a little bit on dessert. I’ve heard of lemonade pies before, but I’d never had one. So when I discovered the new Country Time Lemonade Starters, I thought it would be fun to come up with my own version. We thought we’d make everyone their own personal pie with these cute mini graham cracker crusts we found at the store, and they were a huge hit!
This dessert couldn’t be easier to throw together! All you need is whipped cream, sweetened condensed milk, any flavor of Country Time Lemonade Starters, and a crust. It will make probably 10 mini pies, or two big pies.
Just whip together the lemonade, sweetened condensed milk, and whipped cream.
Until it’s nice and smooth (Forrest said he was tempted to use it as shaving cream. Ha!)
Spoon it into the crust (mini pie crusts only need 1-2 spoonfuls)
And place in the freezer for at least six hours!
These reminded us of a chocolate mousse place we loved in Provo. The consistency was very smooth, and it was a delicious treat!
The Country Time Lemonade Starters are a newer product, and the first store we went to didn’t have them! Fortunately, we found them at another nearby Walmart near all the other drink mixes. I highly recommend trying them out. Not only are they delicious in this pie, but they make making lemonade (either for a crowd or just one class) even easier! Each container makes six quarts or three pitchers, and all you have to do is add water! It has less sugar than leading sodas, and it is totally refreshing! Be sure to see if a local Walmart near you will be doing a demo – I know I want to attend (April Demos and March Demos.)

I love frozen desserts in the summer. I have also loved the very unseasonably warm weather we have had.
