An easy peach crisp recipe is the perfect ending to any summer meal. This recipe comes together in a snap and is absolutely delicious!
I’ve been to my local you-pick peach orchard, Shuler Peach Company, a few times this summer already, so I’ve had the chance to perfect a dozen side dishes, and even a few desserts.
This peach crisp, a riff on apple crisp, was hands down the most rewarding. It makes even my picky eater kids happy, and tastes great anytime, even for breakfast.
I love this recipe because it doesn’t take much time to prepare and is easy to do, nothing has to be precise. Peach crisp tastes amazing, stores in the fridge well, and can actually be frozen once cooked, if you don’t eat it all first.
What kind of oats do I use?
The crisp in peach crisp is basically butter, brown sugar, oats, and flour, with spices.
This recipe allows for you to use whatever you have on hand: old fashioned or rolled oats, or quick oats, it doesn’t matter.
You won’t want to use steel cut or specialty oats, but most people don’t use those regularly anyway.
If you use quick oats, just add about 1/4 cup more to the mix. They don’t absorb as much liquid and don’t have as much satisfying crunch, so you need a little more to make the dessert perfect.
Can I modify the recipe?
One of the best features of this recipe is its flexibility.
I like to add a little almond extract, because almonds and peaches make the most wonderful combination. If you don’t like or don’t have almond extract, a little vanilla extract is great.
I also mix it up with almond flour or ground almonds for extra flavor and texture.
With cinnamon and nutmeg, people often like to add cloves to a dessert. Cloves are a great addition, but taste the mix as you add them as cloves can quickly overwhelm other flavors.
How do I know it’s cooked?
Peach crisp is delicious because it is full of juicy flavor from the peaches and melted, caramely butter-sugar topping.
I love the beautiful, caramel color of the crisp. This is the best way to tell it’s done. But if the top still looks wet, just touch it with your finger or a spoon; if it’s firm to the touch or doesn’t give way, it’s done.
Because of the high liquid content of peaches, it’s helpful to let them sit for ten minutes while you prepare the crisp topping so they can leach some juices. If your peaches were extra juicy, this step will prevent the peach juice from soaking into the topping, preventing it from getting “crisp”.
Peach Crisp Cobbler
Ingredients
- 7-9 peaches, peeled, and cut into bite size chunks
- 1 1/4 cup butter, softened
- 1 1/4 cup brown sugar
- 1 1/4 cup flour
- 1 1/4 cup regular oats, or 1 1/2 cup quick oats
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- optional 1 teaspoon vanilla or almond extract
Instructions
- Peel and slice the peaches into bite size pieces. If you want to learn how to peel a lot of peaches at once, CHECK OUT THIS ARTICLE.
- While you prepare the crisp topping, allow the peaches to drain, either in a bowl or colander.
- In a mixing bowl, cream together the butter and brown sugar until smooth.
- Then add the remaining ingredients.
- Feel free to add vanilla, almond or another extra flavor if you want.
- Add the topping to the drained peaches spread out in an ungreased 9×13 glass or metal dish.
- Spread the mixture over the peaches by using a cookie scoop or dropping pieces with your hand. It will not spread easily once put on the peaches. I actually like to put some mix in my hands, pat it flat and set it down in large pieces over the fruit. It sounds crazy but works really well. It doesn’t have to be perfectly even, but you do want the entire dish covered with topping to prevent liquid bursting through.
- Bake at 350 degrees for 35-45 minutes, not any longer unless you’ve confirmed it is not cooked.
- Let cool 15-20 minutes, then serve while still hot with ice cream, whipped cream, or milk. This dish should serve 12, but because it tastes so good, it never makes it that far in my family. Enjoy!
