Thumbprint cookies are definitely my favorite cookie. My mom has been making them for a few years now, and I’m always so excited when I see them sitting on the counter at her house. Because one of my brother-in-laws can’t eat gluten, I decided to make one batch gluten free as well. I had never done this before, so I wasn’t sure how they would turn out. Well, they were a success! My brother-in-law raved about them, and others said they were quite delicious as well. And of course, we all enjoyed the regular ones as well. Ingredients
- 1 cup softened butter
- 2/3 cup sugar
- 1 teaspoon almond extract
- 2 cups white flour, for gluten free, I used King Arthur's and only used 1 3/4 cup
- Raspberry Jam
- Glaze:
- 1 1/2 cup powdered sugar
- 3 tablespoons water
- 1 teaspoon almond extract
Instructions
- Using a mixer (hand or stand), combine butter, sugar, and almond extract until smooth and cream.
- Slowly add in flour, 1/2 cup at a time, until the dough is formed.
- Once dough is made, roll into small, 1-inch balls and place on a cookie sheet covered with parchment paper or a silicone baking mat.
- Gently press your thumb into the center of each cookie.
- Put a dollop of jam into each imprint.
- Bake at 350 for 14-16 minutes.
- While baking, mix together powdered sugar, water, and almond extract.
- Remove from oven, let cool about five minutes.
- Drizzle with glaze.
- Enjoy!
