A creative way to dress up potatoes for Halloween – an easy and fun Halloween Potato Graveyard!

Spooky Halloween Potatoes Graveyard #SundaySupper
Ingredients
- 5 medium
- Idaho®
- potatoes diced
- 3 long potatoes sliced with mandolin lengthwise
- ? cup of cheddar cheese
- ½ teaspoon of salt
- ½ teaspoon of pepper
- ½ cup of Almond/Regular Milk
- a few dashes of Italian seasoning
Instructions
- *Summary of Directions*
- Here is a quick summary to start off with. Make some mashed potatoes, top with cheddar, and broil. Bake some potatoes slices with spooky coffin and tombstone shapes. Decorate, season, and enjoy!
- *Detail Instructions*
- Slice 5 medium potatoes and place in boiling water. Cook until soft and mashable.
- Slice 3 long potatoes with a mandolin.
- Cut with a knife or cookie cutter the shapes you want like tombstones and coffins.
- Drain the diced potatoes and then mash them.
- Add ½ cup of almond/regular milk.
- Salt and pepper to taste, if you would like.I would recommend ½ teaspoon of each.
- Smooth out the top of the mashed potatoes in an oven safe baking dish. Add ? cup of cheddar cheese to cover the top of the mashed potatoes.
- Broil in the oven for about 3 ½ minutes. Watch closely so the cheese doesn’t burn.
- Remove from the bowl from the oven, and then set the temperature to 400 degrees F.
- Top the cheese with your preferred Italian style spices. I used some fresh thyme, oregano powder, and freshly ground pepper.
- I think the spices add a bit of a windblown, leafy look.
- Place sliced and shaped potatoes on something like a cookie sheet with a little oil and salt.
- Bake in the oven at 400 degrees F for about 10 minutes.
- The potato slices are thin, so it shouldn't take too long for them be cooked all the way through.
- Remove the slices from the oven, and let them sit until they are cool enough to handle. I used a fork to cut a small slit in the cheddar cheese to place my tombstones in, because I don’t think they were sturdy enough on their own. Place the coffins or other shapes as you would like.
As I’ve already mentioned, we love Halloween! So I was so excited when we were asked to participated in the #SundaySupper’s Idaho®Potato Commission event. Last year we made a pumpkin potato recipe for a family party, so we decided to do something a little different this year. Forrest thought it would be fun to make a spooky halloween potatoes graveyard. Since he came up with the idea, I let him go at it.
