Easy Instant Pot Beef Stroganoff with Ground Beef

Creamy and delicious Instant Pot beef stroganoff. This is a great introductory recipe for the Instant Pot!

I bought my Instant Pot back in August when there was a sale, but it took me a while to really try it out.

And then when I tried it out, I almost ruined it (I used it without the pot in it…ugh!), so it took me a little while longer to want to experiment again.

Then Forrest made the most perfect hard-boiled eggs with it a month or so ago, and I became determined to try it out again.

Well, I tried to make roast beef, followed the instructions perfectly…and it was an epic fail. It was totally raw!

I have since figured out why, and I decided that I was going to use the Instant Pot several times during the next week to try and master it.

Fortunately, those subsequent experiences were much, much better – and one of them resulted in this yummy Instant Pot Beef Stroganoff.

Forrest loves stroganoff, so I thought this would be a fun recipe to come up with. I haven’t really seen any other Instant Pot recipes for it, so it was fun to experiment.

The total cook time is six minutes, but, as with all IP recipes, you have to factor in the pressure release time. But it was done in under 30 minutes, and it turned out delicious!

What Sides Go With Beef Stroganoff?

There are lots of great sides. Since it’s a pretty meat and pasta heavy dish, I would suggest adding some vegetables to your meal. I always enjoy mixing them in with everything, but you can just serve them on the side.

  • Peas
  • Caesar salad
  • Green Beans
  • Brocolli
  • Cauliflower
  • Carrots

I think this meal is always delicious with a side of garlic bread or french bread as well.

What is the best meat to use with beef stroganoff?

There are all sorts of ways to make beef stroganoff. This recipe is made with ground beef, just because we almost always have ground beef on hand, and it’s often less expensive than other cuts of meat.

Tender cuts of beef are often preferred – so you may want to consider beef tenderloin or sirloin steak cut into strips.

When was beef stroganoff invented?

Beef stroganoff was originally a Russian dish from the Mid-19th century. It was named after the influential Stroganov family.

Although it was a Russian dish, it’s thought to have been created by French chefs that had been working for the Stroganov family. The first time it was printed in a cookbook was in 1871 called, “A Gift to Young Housewives”.

It’s taken on many forms and variations over the years, but it’s certainly a well-loved dish that has become a traditional comfort dish all around the world.

How to thicken beef stroganoff?

If you find that the dish isn’t thick enough, I would suggest mixing together some 1 teaspoon of cornstarch with 1/4 cup water and whisking it into the stroganoff while it’s simmering.

Can I cook egg noodles in the Instant Pot?

You absolutely can! We have used egg noodles in this recipe many times.

Can I use other noodles?

Sure, the cooking time may vary a little bit. We have had good success using rotini noodles before.

Can I use a different kind of meat?

As I mentioned before, we use ground beef in this recipe, but you can certainly use other cuts of beef or even chicken.

Can beef stroganoff be reheated?

Yes, it can!

Can beef stroganoff be made without mushrooms?

This is one of my favorite parts, but I know some people can’t stand them! So if you’re one of those people, yes, you can skip them.

Can beef stroganoff be made without sour cream?

I would strongly recommend using some kind of creamy mixture like sour cream. Greek yogurt is a good alternative.

Can you freeze beef stroganoff without noodles?

Yes.

Can this be made in a slow cooker?

Yes. I would brown the meat beforehand and cook with all the ingredients except for the noodles on low for about four hours. Add the egg noodles for the last 30 minutes or so.

Ground Beef Stroganoff Instant Pot

Ingredients:

  • 2 Tablespoon olive oil
  • 3/4 lb ground beef
  • 1/2 cup chopped red Onion
  • 1 Tablespoon garlic
  • 4 ounces sliced mushrooms
  • 2 10.5 ounce cans Campbell’s Condensed French Onion soup
  • 2 cups of water
  • Salt, to taste
  • Pepper, to taste
  • 1 Tablespoon cornstarch
  • 3/4 bag Egg noodles
  • 1/2 cup Greek yogurt, or sour cream

Instructions:

Spray Instant Pot interior with cooking spray. Set to saute.

Drizzle about a Tablespoon of cooking oil (I used olive) and brown ground beef or turkey, onion, and garlic.

Drain excess grease and return to pot.

Add mushrooms with saute another minute or two.

Add water, onion soup, and salt and pepper. Mix. Whisk in cornstarch

Add noodles.

Beef Stroganoff and Instant Pot

Place lid on Instant Pot.

Set to high pressure for 6 minutes.

After it is done, let the pressure naturally release for about five minutes, and then change to quick release until all the pressure is gone.

Stir in Greek Yogurt until combined. Enjoy!

  1. Made this and it was so good — I added in a bit of wine to deglaze the pan, and added in a little red pepper (cause we like to spice things up quite a bit). Was really good and easy!

  2. Im confused with the 3/4 bag of egg noodles… How many cups? Oz? Grams? How much did the bag of egg noodles weigh???

    1. I used a 12 ounce bag, so just about 3/4 of that. I didn’t weigh it for an exact amount. This recipe will still turn out if you use a little more or less ๐Ÿ™‚

  3. I’ve been reading about people who forgot to put the inner pot in before cooking and wondered who they were. So you’re the one!

  4. If I wanted to do the whole bag of noodles and the whole 1lb of hamburger should I add more water or time?

    1. If you are replacing the water with beef broth, then yes, that is fine. I would just do 2 cups of beef broth. Make sure you are still using the condensed french onion soup ๐Ÿ™‚

  5. I am having a hard time as your ingredients do not match your recipe. Can you explain what the garlic and onion are for, how much to use, and why your recipe calls for beef broth but the ingredients say french onion soup. I was hoping to make this for dinner tonight, but am a little confused.

    1. The recipe has been update. It did already state in step two what the onion and garlic was for. But the amounts have been added now. I originally was going to use beef broth, but I ended up using French Onion soup. I forgot to change it both places ๐Ÿ™‚ You can use beef broth if you rather.
