Crustless Pizza Recipe
When I had Gestational Diabetes, all I wanted was a nice, slice of deep-dish pizza.
Unfortunately, that didn’t really jive well with Gestational Diabetes, so I ended up finding ways to be creative to get my pizza fix without spiking my blood sugar.
I recently discovered the best low carb pizza crust that requires very little prep or effort, and the results are delicious. You can easily customize this to fit your preferences. It’s a great crustless cheese pizza that the whole family will enjoy!
Keto Cheese Pizza Crust
For this pizza crust recipe, all you need is one ingredient:
These are seriously AMAZING. It’s the perfect thickness, and they taste incredible. I made these for my family, and everyone had rave reviews about them.
Crystal Farms offers two kinds of Cheese Wraps – Mozzarella and Marble Jack. For this recipe, you can really use whichever you want! We stuck with the Mozzarella Cheese Wraps though, because, well…mozzarella and pizza just go together.
If you want the crust to be a little bit thicker/sturdier, you could actually stack two of them on top of each other.

Keto and Low Carb Pizza Sauce
If you are making these pizzas for the purpose of them being low carb and not just because they are delicious (because that’s why I eat them!), make sure you are careful about the pizza sauce you are using.
Store-bought pizza sauces are often culprits for having lots of extra sugar in them, so if you buy one, make sure you check the nutrition information to ensure it has as few carbs as possible. Here are a couple low carb store-bought pizza sauces:

Most pizza toppings are going to be pretty safe, especially since they will be in such small portions. Here are a few of our favorites:
- Pepperoni
- Extra cheese
- Pork sausage (watch for added sugar)

How to Make Low Carb Pizza
Ingredients
- Crystal Farms Mozzarella Cheese Wrap
- Pizza Sauce
- Toppings of Choice
- Extra Mozzarella cheese for the top
Supplies
- Baking Sheet
- Parchment Paper or Silicone Baking Mat
- A couple of spatulas
Instructions
- Preheat oven to 375 degrees.
- Place Cheese Wrap on parchment paper or a silicone baking mat.
- Bake for five minutes, or until the edges start to look crispy.
- Remove from oven and let cool about ten minutes, or until the cheese starts to harden.
- Add sauce, topping and extra cheese.
- Bake for about five minutes and then broil on low for 1-2 minutes if needed.
- Remove from oven and let cool about 10-15 minutes.
Low Carb Cheese Pizza Crust
Ingredients
- Crystal Farms Mozzarella Cheese Wrap
- Pizza Sauce
- Toppings of Choice
- Extra Mozzarella cheese for the top

Recipe Notes and Recommendations
- When you first cook your Cheese Wrap, it will look pretty melty and gooey. Make sure you let it cool about ten minutes before adding your toppings.
- It will re-melt a little bit after it comes out of the oven. Again, let it cool before moving it, or else you’ll end up with a hard to handle pizza. We found these were easiest to handle after cooling for about 10 minutes.
- I used two mini spatulas to move the pizzas from the pan to a plate.
- You can use two Cheese Wraps for a little bit more solid and stable crust, but it tastes great with just one crust.
- You could even try topping the pizza with another cheese wrap instead of shredded cheese!

Is this low carb pizza good for you?
Pizza is often thought of as unhealthy food, but honestly, we believe that with the right preparation and toppings, it can actually be quite balanced.
This pizza specifically is designed to be low carb. If that’s something your body does well with, these can be a great addition to that diet.
Crystal Farms Cheese Wraps are a great source of protein with 7 or 8 grams of protein per serving (depending on what wrap you are using). They have between 6 and 9 grams of fat. No carbs!
