A quick summertime trio salad consisting of cherry tomatoes, cucumber and avocados.
Hi. It’s Julie from Confessions of a Cooking Diva again. I’m here to share with you a delicious summertime salad. I absolutely love cherry tomatoes. I can eat them alone as a snack or in a recipe. As a child I would eat so many tomatoes that I would develop sores on my mouth. Didn’t seem to stop me from eating them all the time. The things we do for love!
My favorite dish to use cherry tomatoes in is this Trio Salad. There are few dishes in this world that I don’t willingly share with others, but this is one I don’t want to share. Not many dishes are easier or packed with so much flavor as this one. Between the bite of the cherry tomatoes, the crispness of the cucumbers, and the creaminess from the avocado – it all adds up to a winning trio.
This would be great as a side dish, taken to a potluck or a picnic. It’s the perfect dish for summer. Great summer produce, quick to put together and doesn’t require you to turn on the oven. A win-win recipe.

Trio Salad
Ingredients
- 1 cucumber, peeled and diced
- 1 pint of grape tomatoes, sliced or whole
- 2 avocados, peeled and diced
- 4 tsp. cider vinegar, I have been known to add a bit more
- 1 tbsp. olive oil
- salt and pepper, to taste
Instructions
- In a medium-sized bowl add all the produce.
- Then mix in the vinegar and olive oil. Mix well.
- Season with salt and pepper, to taste.
- Serve.
