Sweet Potato Breakfast Casserole

Paleo Breakfast Casserole

This delicious and somewhat nutritious paleo breakfast casserole is great for upcoming holidays. It’s filled with chunks of sweet potato, sausage, and more. This is low FODMAP diet friendly, as well as gluten free!

I love breakfast casseroles! They are usually so easy to put together, and everyone seems to enjoy them. A few weeks ago during General Conference, I decided I would make a breakfast casserole to start the morning off. While I usually default to my favorite easy sausage breakfast casserole, since we’ve had to put Jack on a low FODMAP diet, I thought I would make something he could enjoy, too. I’m supposed to be eating little dairy and gluten as well, so I figured I could indulge in it guilt-free, as well!

As it turned out, this turned into a Paleo breakfast casserole. While I don’t have any desires to live a complete Paleo lifestyle, I think it’s nice to incorporate those types of meals every now and again. This casserole was SO yummy, even if it was missing some of my favorite breakfast casserole ingredients (namely, cheese.)

I never used to eat sweet potatoes until I met Forrest, but they’ve become one of my favorite foods to cook with. They are a lot more nutritious than regular potatoes, and really, I think they are a lot more flavorful. I had used sweet potatoes in these healthy breakfast burritos in the past, so I thought it would be fun to use them in this casserole!

Cook Time: 45 minutes
Total Time: 1 hour 10 minutes

Ingredients

  • 2 medium sweet potatoes
  • 1 pound Italian sausage or breakfast sausage
  • 1/2 green pepper, diced
  • 1/2 red pepper, diced
  • 8 eggs
  • 1/2 cup almond milk
  • salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook and crumble sausage. Drain excess grease and set aside.
  3. Cube sweet potatoes into bite sized pieces and cook in some cooking oil in a skillet until soft, about 15 minutes.
  4. Combine together sausage, sweet potatoes, and peppers, and pour evenly into a 9x13 baking dish.
  5. In a bowl, whisk together eggs, milk, salt and pepper (a few shakes of each), garlic powder, and onion powder. Pour evenly over sausage mixture.
  6. Bake for 45 minutes, or until eggs are cooked.

  1. I used frozen sweet potatoe fries instead of fresh sweet potatoes. Sure made things go much faster.
    Also tasted very good. Try when you don’t have a lot of time.

    1. You sure can! Lots of people have had great success with it. I personally haven’t reheated, but a lot of people say they cut it into slices and then just pipe it into the microwave!

  3. Maybe I missed it but do you know how many this would serve. I just started the Paleo diet and am concerned about quantity. This sounds so much like the one I made before I went on the diet. It sounds so good and from the responses, it must be.

  4. Are these sweet potatoes or yams? They look orange like yams. I used white sweet potatoes and am hoping they turn out The same. Excited to try it.

    1. They should taste fine! They said sweet potatoes at the store, but who knows! Maybe they are yams. Either way it should be fine 🙂

  8. Any change you might know if this could be made in a crock pot? I’m going to a brunch and someone requested a gluten free meal. No one else signed up for anything gluten free so I thought I’d give it a try.

  9. Do you have to sauté sweet potatoes ahead of time? Wouldn’t they cook just fine without doing that?

    1. I’m sorry, I don’t usually include grams of protein, calories, etc. MyFitnessPal.com has a place where you can grab that information though! I would say this probably serves 8-12.

    I added some chopped spinach and some green onions – I also used chicken sausage. I’ve made it twice now (last time with ground turkey) and it comes out perfect.

    I eat it as breakfast all week so I cut 9 servings and wrap them up individually for freezing. Throw one in the fridge the night before to thaw and just microwave it for breakfast! They freeze just fine.

  11. Is there any way to turn this into a crock pot recipe? Those are so convenient to turn on before you go to bed, waking up to a perfectly cooked breakfast 🙂

    1. You know, I haven’t tried, but that is now on my list of things to do. I would imagine you could though – just put everything in the night before and put it on low!

  13. Have made this before and it was a hit! Would I be able to make this ahead of time and keep it in fridge/freezer until I wanted to bake it?

    1. So happy to hear that! I definitely think you could make it before and put it in the fridge. Not positive how it would do in the freezer, but I imagine there wouldn’t be a problem!!
